Description
The Coho or silver salmon is leaner than the king and red, has a lighter color of meat, softer texture, and milder flavor. The flavor, oil content allow for a wide range of cooking applications. Cohos are the last species of salmon to make it to our fishing grounds, usually becoming available in mid July.
Coho’s are available whole, or gutted and gilled. All our salmon are bled and chilled in slush ice until they are delivered the following day, boxed and on ice.
